Eubiotos 1 was a monk in the monastery of Stoudios during the time of Naukratios 1; he was noted for his piety and austerity and was admired and imitated by St Evarestos (Evarestos 1), who shared his roof and food: Vita S. Evaristi 9 (p. 303), Synax. Eccl. Const. 347-348 (unnamed). They both desired a more rigorous lifestyle and secretly withdrew together to an island in the Propontis, where together they underwent much hardship as anchorites; later they were tracked down by the hegoumenos Naukratios 1 and returned to the monastery of Stoudios at his summons: Vita S. Evaristi 11 ( p. 305). Naukratios 1 was hegoumenos from 826 to 848; Evarestos 1 perhaps joined the monastery in 842/843.
